  • 1 cup of diced carrots
  • ½ cup of chopped celery
  • ½ cup of chopped onions
  • 1 cup of diced potatoes
  • 2 cups of mixed seafood (shrimp, clams, and fish)
  • 3 cups of seafood stock
  • 1 cup of heavy cream
  • 2 tablespoons of butter
  • ¼ cup of all-purpose flour
  • ½ teaspoon of salt
  • ½ teaspoon of black pepper
  • 1 teaspoon of Old Bay seasoning
  • 2 tablespoons of fresh parsley, chopped

Instructions

  1. Dice the potatoes, onions, celery, and carrots into small, even pieces.
  2. In a large pot, melt the butter over medium heat. Add the onions, celery, and carrots. Sauté until softened, about 5 minutes.
  3. Sprinkle the flour over the sautéed vegetables. Stir continuously for 2 minutes to cook out the raw flour taste.
  4. Gradually pour in the seafood stock, stirring constantly to avoid lumps. Bring to a simmer.
  5. Add the diced potatoes and cook until tender, about 15 minutes.
  6. Stir in the mixed seafood and cook for an additional 5 minutes, or until the seafood is just cooked through.
  7. Lower the heat and gently stir in the heavy cream. Heat through but do not boil.
  8. Add salt, pepper, Old Bay seasoning, and fresh parsley.
