8 oz pasta (penne or fettuccine)
1 tablespoon lemon juice
2 cloves garlic, minced
2 salmon fillets
1 cup cherry tomatoes, halved
1 cup heavy cream
1 cup spinach leaves
1/2 cup grated Parmesan cheese
2 tablespoons olive oil
Salt and black pepper, to taste
Fresh basil, for garnish
Instructions
Cook the pasta according to package instructions. Drain and set aside.
Heat olive oil in a large skillet over medium heat. Add minced garlic and cook until fragrant.
Add cherry tomatoes to the skillet and cook until they start to soften.
Stir in spinach leaves and cook until wilted.
Pour in the heavy cream and add Parmesan cheese, stirring until the cheese is melted and the sauce is smooth. Season with salt and black pepper.
While the sauce is simmering, season salmon fillets with salt, black pepper, and lemon juice. Cook the salmon in a separate skillet over medium heat until cooked through and flaky.
Flake the salmon into bite-sized pieces and add it to the pasta sauce.
Toss the cooked pasta with the sauce and salmon until well combined.
