1 lb shrimp, peeled and deveined
1 cup grated Parmesan cheese
6 slices bacon, chopped
1 medium tomato, diced
2 cups heavy cream
1/2 teaspoon black pepper
1/2 medium yellow onion, diced
1 teaspoon salt
3 cloves garlic, minced
1 lb fettuccine, cooked
1/2 cup fresh parsley, chopped
Instructions
In a large pot over medium heat, cook the chopped bacon until crispy. Remove and set aside, leaving the bacon fat in the pot.
Add the shrimp to the pot with salt and pepper. Cook until the shrimp turns pink and opaque. Remove the shrimp from the pot and set aside with the bacon.
Add the diced onions, tomatoes, and minced garlic to the pot. Cook until the garlic starts to brown and the onions are translucent.
Pour in the heavy cream and bring it to a boil.
Add the cooked fettuccine to the pot. Return the shrimp and bacon to the pot along with the grated Parmesan cheese and chopped parsley. Stir until the cheese melts and the sauce coats the pasta and shrimp evenly.
