2 chicken breasts
1 cup corn
1 onion, chopped
2 cloves garlic, minced
1 cup cannellini beans
1 can (4 oz) green chilies
4 cups chicken broth
1 tsp cumin
1 tsp paprika
1 tsp oregano
4 oz cream cheese
1 tbsp olive oil
1 tbsp lime juice
Fresh cilantro, chopped (for garnish)
Instructions
Heat olive oil in a large pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook until fragrant, about 1 minute.
Add the chicken breasts to the pot. Sear on each side until lightly browned, about 4 minutes per side.
Pour in the chicken broth. Add green chilies, cannellini beans, corn, cumin, paprika, and oregano. Stir well to combine.
Bring the mixture to a boil. Reduce heat and let it simmer for 20-25 minutes, or until the chicken is cooked through.
Remove the chicken breasts from the pot. Shred the chicken using two forks, then return it to the pot.
Stir in the cream cheese until fully melted and incorporated into the chili.
Add lime juice and chopped cilantro. Stir to combine. Adjust seasoning with salt and pepper as needed.
Ladle the chili into bowls. Garnish with additional cilantro, lime wedges, and any desired toppings.
