  • 3 – 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil, divided
  • Salt and pepper to taste
  • 1/2 onion, diced
  • 1/2 green pepper, diced
  • 1/2 yellow pepper, diced
  • 12 oz pasta, cooked
  • 1 cup Italian blend cheese or mozzarella
  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon minced garlic
  • 1/2 cup white wine
  • 1/3 cup frozen chopped spinach
  • 2 cups half and half
  • 1 – 1 1/2 cups shredded Parmesan

Instructions

  1. Preheat oven to 350°F. Season chicken with 1 tablespoon olive oil, salt, and pepper. Grill or pan-sear until fully cooked, then dice.
  2. Cook pasta according to package instructions. Drain and set aside.
  3. In a pan, heat the remaining olive oil. Sauté garlic for 1-2 minutes, then add flour and cook until bubbling. Slowly whisk in half and half and white wine, stirring to avoid lumps. Add frozen spinach and bring to a boil until the sauce thickens. Stir in Parmesan, salt, and pepper. Remove from heat.
  4. In a separate pan, sauté diced onion and bell peppers in olive oil until softened.
  5. In a large bowl, combine diced chicken, sautéed vegetables, cooked pasta, and the prepared sauce. Mix well. Transfer the mixture to a 9×13 baking dish. Top with Italian blend cheese. Bake in the preheated oven for 25 minutes, or until the cheese is golden and bubbly.
