  • 1 box Penne Pasta
  • 1 lb Shrimp (peeled and deveined)
  • 3 cups Fresh Chopped Spinach
  • 1 cup Mozzarella or Swiss Cheese
  • 3 Garlic Cloves (minced)
  • 2 tsp Salt
  • 2 tsp Pepper
  • 2 tsp Garlic Salt
  • 8 cups Water
  • 2 tbsp Butter
  • 1 tbsp Oil

Instructions

  1. Bring 8 cups of water to a boil. Add the penne pasta and cook according to the package instructions. During the last 5 minutes of cooking, add the shrimp to the pasta water. Cook until shrimp are pink and opaque. Reserve 1 cup of pasta water, then drain the rest. Keep the pasta and shrimp warm.
  2. In a large pan, heat the oil and butter over medium heat. Once the butter is melted, add the minced garlic and sauté until fragrant.
  3. Add the cooked pasta to the pan with the garlic mixture. Toss to coat. Season with salt, pepper, and garlic salt. Cook for about 2 minutes, stirring often.
  4. Stir in the fresh spinach and cook for 1 minute, or until wilted. If needed, add 1/3 cup of reserved pasta water to help steam and cook the spinach.
  5. Add the cooked shrimp and cheese to the pan. Gently stir until the cheese melts. Avoid overcooking. Adjust seasoning to taste.
