50g flour
300g macaroni or rigati
2 garlic cloves, crushed
140g extra mature cheddar, coarsely grated
Small bunch thyme, leaves picked
50g butter
50g breadcrumbs
600ml full-fat milk
1 small cauliflower, cut into florets
Instructions
Preheat the grill to its highest setting and bring a large pan of salted water to a boil.
Cook the pasta in the boiling water for 4 minutes. Add the cauliflower florets and cook for an additional 8 minutes. Drain and reserve 100ml of the cooking water.
Melt the butter in a medium pan over low heat. Stir in the flour to make a roux, cooking for 1-2 minutes. Gradually pour in the milk, stirring constantly until the sauce thickens. Remove from heat and stir in the grated cheddar, reserved cooking water, and season with salt and pepper.
Combine the pasta and cauliflower in a large casserole dish. Pour the cheese sauce over and stir to combine. Mix the crushed garlic, breadcrumbs, and thyme leaves, then scatter over the top.
Grill for 2-3 minutes until the topping is golden and bubbling.
