8 ounces short-shaped pasta
½ cup whipping cream
1 5.5 ounce container Boursin cheese
2 cups baby spinach
Salt and pepper, to taste
Instructions
Bring a large pot of well-salted water to a boil. Cook the pasta according to package directions. Reserve 1 cup of cooking water, then drain the pasta and return it to the pot.
In a small pan over medium heat, combine whipping cream and Boursin cheese. Whisk until the cheese melts into the cream, creating a smooth sauce.
Add the baby spinach to the cooked pasta in the pot. Pour the creamy Boursin sauce over the pasta and spinach. Stir well to combine. Gradually add reserved cooking water, a few tablespoons at a time, until the sauce reaches desired creaminess. Season with salt and pepper to taste.
