4 medium potatoes, peeled and cubed
2 cups fresh or frozen peas
3 tablespoons butter
1 small onion, finely chopped
3 tablespoons all-purpose flour
1 ½ cups milk
1 cup heavy cream
Salt and pepper to taste
Fresh parsley, chopped for garnish
Instructions
Boil potatoes in salted water until tender, about 10-15 minutes. Drain and set aside.
In a separate pot, boil peas until tender, about 5-7 minutes. Drain and set aside.
In a large skillet, melt butter over medium heat. Add chopped onion and sauté until translucent, about 3-4 minutes.
Sprinkle flour over onions and stir well. Cook for 1-2 minutes to eliminate raw flour taste.
Gradually whisk in milk and heavy cream, stirring constantly until sauce thickens, about 5-7 minutes.
Gently fold cooked potatoes and peas into the cream sauce. Stir to coat evenly.
Season with salt and pepper to taste.
Transfer to a serving dish and garnish with chopped parsley.
