  • 1 egg
  • 1/2 teaspoon baking powder
  • 1/2 cup unsalted butter, room temperature
  • 1/4 cup buttermilk
  • 1 teaspoon cotton candy flavoring
  • 2–1/4 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 drop soft pink gel food coloring
  • 1 drop sky blue gel food coloring
  • 1 cup unsalted butter, room temperature (for buttercream)
  • 1–1/2 cups confectioners’ sugar
  • 2 teaspoons cotton candy flavoring (for buttercream)
  • 1 drop soft pink gel food coloring (for buttercream)
  • 1 drop sky blue gel food coloring (for buttercream)

Instructions

  1. Preheat your oven to 350°F (177°C) and line baking sheets with parchment paper.
  2. Cream together the sugar and butter until light and fluffy.
  3. Whisk together the buttermilk, egg, and cotton candy flavoring, then mix into the butter mixture.
  4. Add the flour, baking soda, salt, and baking powder, and mix until just combined.
  5. Divide the dough, tint one half pink and the other blue, and swirl together.
  6. Scoop dough onto baking sheets and bake for 6-10 minutes until edges brown.
  7. Cool on baking sheets for 5 minutes before transferring to a wire rack.
  8. Beat the butter for the buttercream until creamy, then add confectioners' sugar and beat until fluffy.
  9. Mix in cotton candy flavoring and divide buttercream into two bowls, tinting one pink and the other blue.
  10. Pipe alternating colors of buttercream onto half of the cookies and sandwich with the remaining cookies.
  11. Chill the assembled cookies in the refrigerator to firm up the buttercream.
