Classic Madeleines are delightful French sponge cakes known for their distinctive shell shape. These buttery treats are light and airy, with a hint of lemon zest and vanilla. Ingredients

  • 2 large eggs
  • 3/4 cup white sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, melted and cooled
  • 1 tablespoon lemon zest
  • Confectioners' sugar for dusting (optional)

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C). Grease and flour madeleine molds.
  2. In a medium bowl, beat eggs and sugar until thick. Stir in vanilla. Fold in flour, then melted butter and lemon zest.
  3. Spoon batter into molds, filling 3/4 full.
  4. Bake for 8 to 10 minutes or until lightly golden and springy to the touch.
  5. Cool in molds for a few minutes before transferring to wire racks to cool completely.
  6. Dust with confectioners' sugar before serving, if desired.
