6 slices bacon, chopped
1 bouquet garni (thyme, bay leaves, parsley)
1 large onion, finely chopped
3 tablespoons olive oil
3 carrots, sliced
2 cups beef broth
2 garlic cloves, minced
1/4 cup all-purpose flour
1 lb mushrooms, quartered
2 tablespoons tomato paste
3 lbs beef chuck, cut into 2-inch pieces

Instructions
In a large pot, heat the olive oil over medium heat. Add the chopped bacon and cook until crisp. Remove the bacon and set aside.
Season the beef pieces with salt and pepper. In the same pot, brown the beef in batches, ensuring all sides are seared. Remove and set aside with the bacon.
In the same pot, add the finely chopped onion, sliced carrots, and minced garlic. Cook until the onion becomes translucent.
Sprinkle the all-purpose flour over the vegetables and stir well to coat them, making sure to scrape the bottom of the pot to release any browned bits.
Return the browned beef and crisp bacon to the pot. Stir in the tomato paste and add the bouquet garni. Pour in the beef broth and bring to a boil. Once boiling, reduce the heat to a simmer, cover, and let cook for about 2 hours.
In a separate pan, sauté the quartered mushrooms in a bit of olive oil until golden brown. Add the mushrooms to the stew during the last 30 minutes of cooking.
Remove the bouquet garni. Adjust seasoning with salt and pepper as needed. Serve hot.
