Classic Chicken Francese is a delicious Italian-American dish featuring tender chicken breasts coated in a crispy Parmesan crust, simmered in a lemony butter sauce. This dish is perfect for a weeknight dinner or a special occasion, served hot with fresh lemon slices and garnished with parsley.

  • 4 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 1/2 cup chicken broth
  • Salt and pepper, to taste
  • 1/4 cup fresh lemon juice
  • 2 tablespoons capers (optional)
  • 2 tablespoons chopped fresh parsley, for garnish
  • Lemon slices, for serving

Instructions

  1. Place chicken breasts between two sheets of plastic wrap and pound to an even thickness. Season both sides with salt and pepper.
  2. In a shallow dish, place flour. In another shallow dish, beat eggs. In a third shallow dish, mix grated Parmesan cheese with a pinch of salt and pepper.
  3. Dredge each chicken breast in flour, then dip in beaten eggs, allowing excess to drip off. Finally, coat with Parmesan cheese mixture, pressing gently to adhere.
  4. Heat olive oil and 2 tablespoons butter in a large skillet over medium-high heat.
  5. Add coated chicken breasts to skillet and cook until golden brown and cooked through, about 3-4 minutes per side. Remove chicken from skillet and transfer to a plate.
  6. In the same skillet, add remaining butter, chicken broth, lemon juice, and capers (if using). Bring mixture to a simmer, scraping up any browned bits from bottom of skillet.
  7. Return chicken breasts to skillet and simmer for another 2-3 minutes, until sauce has slightly thickened and chicken is heated through.
  8. Garnish with chopped parsley and serve hot with lemon slices on the side.
