1 pound elbow macaroni
1 cup celery, finely chopped
1/2 cup sour cream
1 tablespoon parsley, finely chopped
1/4 cup apple cider vinegar
1 tablespoon sugar
1 large tomato, chopped (optional)
1/4 cup grated onion
1 cup mayonnaise
1 tablespoon mustard
Salt and pepper, to taste
Instructions
Boil the elbow macaroni according to the package directions. Drain and rinse with cold water to cool. Set aside.
In a large mixing bowl, combine the finely chopped celery, grated onion, parsley, and optional chopped tomato.
In a separate small bowl, whisk together the mayonnaise, sour cream, mustard, sugar, apple cider vinegar, salt, and pepper until smooth.
Add the cooled macaroni to the bowl with vegetables. Pour the dressing over the mixture and stir until well combined.
