1 ½ cups cheddar cheese, shredded
Salt and pepper, to taste
1 teaspoon onion powder
1 teaspoon Italian seasoning
3 tablespoons flour
6 strips bacon
2 boneless, skinless chicken breasts
2 cups uncooked pasta (rotini, penne, rigatoni, bow tie, etc.)
1 tablespoon garlic, minced
2 cups half and half (can substitute whole milk)
2 tablespoons dry ranch dressing seasoning mix
Instructions
Prepare Ingredients: Shred cheddar cheese and set aside. Cut bacon into squares and let sit for 5 minutes. Cut chicken into bite-sized pieces and season with salt, pepper, 1 tsp onion powder, and 1 tsp Italian seasoning. Toss chicken in flour.
Cook Bacon: In a skillet over low heat, cook bacon until crispy. Reserve 2 tbsp bacon drippings in the pan.
Cook Chicken: Increase heat to medium-high. Cook chicken in bacon drippings until golden brown. Set aside once cooked.
Cook Pasta: Boil pasta according to package instructions.
Prepare Sauce: In the skillet, sauté minced garlic. Temper half and half and gradually whisk into skillet. Add shredded cheddar cheese and ranch seasoning mix, stirring until smooth.
Combine Ingredients: Return cooked chicken to skillet. Add cooked pasta and mix well. Reduce heat to low.
Serve: Let the sauce thicken, then serve topped with crumbled bacon.
