1/2 cup unsalted butter
1 teaspoon vanilla extract
8 ounces semi-sweet chocolate, chopped
3/4 cup granulated sugar
1/4 cup light brown sugar, packed
2 large eggs
3/4 cup all-purpose flour
2 tablespoons unsweetened cocoa powder
1/2 teaspoon sea salt
1/2 teaspoon baking powder
1 cup chocolate chips or chunks (optional)
Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a medium saucepan over low heat, melt the butter and chopped chocolate, stirring until smooth. Remove from heat and allow to cool slightly.
In a large bowl, whisk together granulated sugar, brown sugar, eggs, and vanilla extract until well combined.
Gradually stir in the cooled chocolate mixture into the sugar and egg mixture.
Sift flour, cocoa powder, sea salt, and baking powder over the chocolate mixture. Gently fold until just combined. If using, fold in additional chocolate chips or chunks.
Use a cookie scoop or spoon to drop heaping tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 10-12 minutes, or until the cookies are set around the edges but still soft in the center.
Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
