Lemon Orzo is a delightful and refreshing dish that combines the nutty flavor of toasted orzo with the bright zest and juice of lemon. Enhanced with garlic, butter, and Parmesan cheese, this dish is perfect as a side or a light main course. Finished with fresh parsley, it offers a burst of flavor in every bite.

  • 1 lemon, juiced and zested
  • 1/2 tsp garlic powder
  • 1 1/2 cups uncooked orzo
  • 2 tbsp unsalted butter, divided
  • 3/4 tsp kosher salt
  • 1/4 cup Parmesan cheese, grated
  • 2 1/2 cups chicken stock
  • 1 tbsp fresh parsley, chopped

Instructions

  1. In a large skillet, melt 1 tablespoon of butter over medium heat. Add the uncooked orzo and toast, stirring frequently, until golden brown, about 3-4 minutes.
  2. Pour in the chicken stock and add the lemon zest, kosher salt, and garlic powder. Bring to a simmer and cook, stirring occasionally, until the orzo is al dente and the liquid is mostly absorbed, about 10-12 minutes.
  3. Stir in the remaining tablespoon of butter, lemon juice, and grated Parmesan cheese. Mix until the butter is melted and the cheese is well incorporated.
  4. Remove from heat and fold in the chopped fresh parsley. Serve warm.
