  • ⅓ cup (38g) confectioners' sugar
  • ¼ teaspoon kosher salt
  • 8 tablespoons unsalted butter, cut into cubes and chilled
  • 1 large egg yolk
  • 1 tablespoon heavy cream
  • ½ teaspoon pure vanilla extract
  • ¼ cup lemon zest + ½ cup juice (from 4 lemons)
  • 1 large egg + 5 large yolks
  • ⅓ cup honey
  • Kosher salt
  • 4 tablespoons unsalted butter, cut into 4 pieces and chilled
  • 2 tablespoons heavy cream
  • 10 ounces (2 cups) blueberries
  • 2 tablespoons cornstarch
  • ¼ cup honey

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix flour, sugar, and salt. Cut in butter until crumbly. Stir in egg yolk, cream, and vanilla until combined. Chill for 30 minutes.
  3. Roll out dough and press it into a tart pan. Bake for 20 minutes until golden brown; let cool.
  4. In a saucepan over medium heat, whisk together lemon juice and zest, honey, and eggs until thickened (about 10 minutes). Pour into cooled crust.
  5. Cook blueberries with honey and cornstarch until slightly thickened (about 5 minutes). Pour over lemon curd layer.
  6. Chill in the refrigerator for at least two hours before serving.
