  • 1½ cups blueberries
  • 2 tablespoons sugar
  • 3 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 egg (for egg wash)
  • 2 cups powdered sugar
  • ¼ cup lemon juice

Instructions

  1. In a food processor, combine flour, salt, and sugar. Add cubed butter and pulse until the mixture resembles peas.
  2. Gradually add ice water until the dough comes together. Divide into two discs, wrap in plastic, and refrigerate for at least one hour.
  3. Toss blueberries with sugar, cornstarch, and lemon juice in a bowl for the filling.
  4. Roll out one disc of dough on a floured surface to about ¼ inch thick. Cut out circles with a cookie cutter and place on parchment-lined baking sheets.
  5. Brush edges with egg wash, fill with blueberry mixture, top with another circle of dough, seal edges with a fork, and brush tops with egg wash.
