  • 1 cup ground beef
  • 4 cheese slices
  • 2 tbsp pickled cucumbers (sliced)
  • Iceberg lettuce (chopped, optional topping)
  • 2 tbsp liquid from pickled cucumbers
  • 1/4 cup mayonnaise
  • 1 tbsp yellow mustard
  • 1 tsp white vinegar
  • 1/2 tsp paprika
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1 tsp sugar
  • Cooking spray

Instructions

  1. Gather all ingredients and lightly grease a non-stick frying pan with cooking spray. Preheat over medium-high heat.
  2. In a mixing bowl, combine mayonnaise, liquid from pickled cucumbers, yellow mustard, white vinegar, paprika, onion powder, garlic powder, salt, and sugar. Mix until smooth and set aside.
  3. Spread ground beef evenly over each mini tortilla and place them in the hot pan with the beef side down. Cook for 2–3 minutes until browned.
  4. Flip the tortillas gently to toast the other side. Place cheese slices on top and cover the pan for 2 minutes until cheese is melted.
  5. Remove from heat and top each taco with sliced pickles and chopped lettuce if desired.
  6. Drizzle with prepared sauce before serving warm.
