Ingredients

Scale
  • 1 cup mayonnaise
  • ½ cup Thai sweet chili sauce
  • 1 teaspoon Sriracha (or more to taste)
  • 2 tablespoons honey
  • 1 ½ pounds boneless skinless chicken tenderloins
  • 1 cup buttermilk
  • ¾ cup all-purpose flour
  • ½ cup cornstarch
  • 1 large egg (room temperature)
  • 1 tablespoon Sriracha
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ⅛ teaspoon cayenne pepper (optional)
  • 2 cups panko breadcrumbs (plain)
  • canola oil (for frying)
  • parsley (chopped for garnish)

Instructions

  1. Prepare the bang bang sauce by mixing mayonnaise, Thai sweet chili sauce, Sriracha, and honey in a large bowl until well blended.
  2. Marinate chicken tenderloins in buttermilk for at least 10 minutes to enhance tenderness.
  3. Create a dredging station by combining flour, cornstarch, garlic powder, salt, black pepper, and cayenne in a shallow dish; beat an egg with additional Sriracha in another bowl.
  4. Coat each marinated chicken piece first in the flour mixture, then dip into the egg mixture before rolling it in panko breadcrumbs.
  5. Heat oil in a deep frying pan to 350°F (175°C). Fry the breaded chicken pieces until golden brown on both sides (about 3 minutes per side). Drain on paper towels.
  6. Serve hot drizzled with the prepared bang bang sauce and garnished with chopped parsley.
