This Baked Cod with Tomatoes, Capers, and Basil is a delightful and healthful meal. The tender cod fillets are baked with a savory sauce made from cherry tomatoes, capers, and fresh basil, served alongside roasted new potatoes. Perfect for a weeknight dinner or special occasion.

  • 2 vegetable stock cubes, crumbled
  • 450g new potatoes, halved
  • 4 cod fillets
  • 1 garlic clove, sliced
  • 400g can cherry tomatoes
  • 1 tbsp capers, drained
  • 1 bunch basil, chopped
  • 2 tbsp olive oil
  • 1 tsp dried oregano

Instructions

  1. Preheat the oven to 200°C (180°C fan). Toss the halved new potatoes with 1 tablespoon of olive oil, dried oregano, and a pinch of pepper. Spread on a baking sheet and roast for 20 minutes until tender.
  2. Heat the remaining tablespoon of olive oil in a pan over medium heat. Add the sliced garlic and cook until fragrant. Stir in the cherry tomatoes, capers, chopped basil, and crumbled vegetable stock cubes. Simmer until it thickens slightly, about 5-7 minutes.
  3. Remove the potatoes from the oven and make space for the cod fillets. Pour the prepared sauce over the cod and return to the oven. Bake for an additional 20 minutes, or until the cod flakes easily with a fork.
  4. Serve the baked cod fillets with the roasted new potatoes and a side of green beans or your favorite vegetable.
