Traditional Irish Stew is a hearty and comforting dish made with tender lamb, fresh vegetables, and aromatic herbs. This classic recipe brings together the rich flavors of lamb shoulder, potatoes, and carrots, simmered to perfection for a satisfying meal that warms the soul.

  • 1 tablespoon olive oil
  • 2 pounds boneless lamb shoulder, cut into 1-inch pieces
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons all-purpose flour
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 cups water, or as needed
  • 4 cups peeled and cubed potatoes
  • 2 cups sliced carrots
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried parsley

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Season lamb pieces with salt and black pepper, then coat with flour, shaking off excess.
  2. Brown lamb pieces in the hot oil on all sides, about 5 minutes. Remove lamb from pot and set aside.
  3. Add chopped onion to the pot; cook and stir until onion pieces begin to turn translucent, about 5 minutes. Stir in minced garlic and cook for an additional 1 minute.
  4. Return browned lamb to the pot. Pour in enough water to cover the lamb; bring to a boil. Reduce heat to low, cover, and simmer for 1 hour.
  5. Stir cubed potatoes, sliced carrots, dried thyme, dried rosemary, and dried parsley into the stew. If needed, add more water to cover vegetables.
  6. Return to a simmer, cover, and cook until vegetables are tender, about 1 hour more. Season with salt and black pepper to taste before serving.
