  • 1 pound dried red beans
  • 2 celery stalks, chopped
  • 1 pound smoked sausage, sliced
  • 1 large onion, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 3 garlic cloves, minced
  • 1 green bell pepper, chopped
  • 2 bay leaves
  • 1/2 teaspoon cayenne pepper
  • Salt, to taste
  • Cooked rice, for serving
  • Chopped green onions, for garnish

Instructions

  1. Rinse the red beans and remove any debris. Place them in a large pot and cover with water by 2 inches. Bring to a boil over high heat. Reduce the heat to low, cover, and simmer for 1 hour. Remove from heat and let the beans soak for 1 hour.
  2. Heat vegetable oil in a large skillet over medium heat. Add the onion, bell pepper, and celery. Cook until softened, about 5 minutes. Stir in the garlic and cook for an additional minute.
  3. Transfer the cooked vegetables to the pot with the beans. Stir in the thyme, oregano, bay leaves, cayenne pepper, and salt to taste.
  4. Mix in the sliced smoked sausage. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 2 to 3 hours, or until the beans are tender and creamy. Add water as needed to maintain the desired consistency.
  5. Spoon the red beans and sausage over cooked rice. Garnish with chopped green onions, if desired.
