  • 1 ¼ cups vegetable oil (for roux)
  • 12 ounces andouille sausage
  • 1 teaspoon hot sauce
  • 2 teaspoons Cajun seasoning
  • 1 cup okra, sliced
  • 1 cup bell pepper, chopped
  • 1 cup onion, chopped
  • 1 pound chicken
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 tablespoon vegetable oil
  • 1 teaspoon gumbo file powder
  • 1 teaspoon black pepper
  • 1 cup all-purpose flour
  • Salt to taste
  • Cooked white rice for serving

Instructions

  1. Season the chicken and sausage with Cajun seasoning. Heat 1 tablespoon of vegetable oil in a large pot over medium heat. Sear the chicken and sausage until browned. Remove and set aside.
  2. In the same pot, combine 1 ¼ cups vegetable oil and the flour. Stir constantly over medium heat until the roux turns a dark brown color, about 15-20 minutes.
  3. Add the bell pepper, celery, onion, and garlic to the roux. Cook until the vegetables are soft, about 5 minutes.
  4. Gradually stir in the chicken broth, bringing the mixture to a simmer. Add the okra, black pepper, hot sauce, and gumbo file powder. Stir to combine. Return the chicken and sausage to the pot. Simmer for 1 hour, stirring occasionally.
  5. Season with salt to taste. Serve hot over cooked white rice.
