Ingredients
- 3 cups white cabbage (thinly sliced)
- 3 cups red cabbage (thinly sliced)
- 1 medium red bell pepper (cut into thin strips)
- 1 medium carrot (julienne)
- 1 cup sugar snap peas (chopped)
- 3 green onions (chopped)
- 1 tbsp cilantro (chopped)
- 1/2 cup cashews (toasted and chopped)
- 1/2 cup crispy chow mein noodles
- 4 tbsp sesame oil
- 4 tbsp rice vinegar
- 2 tbsp honey
- 2 tbsp lime juice
- 2 tsp fresh ginger (peeled and grated)
- 1 tsp salt (or added to taste)
- 1/2 tsp ground black pepper (or added to taste)
Instructions
- Preheat a skillet over medium heat and roast cashews until golden brown. Let cool before chopping.
- Wash and prepare all vegetables: slice cabbages and bell pepper, julienne carrot, and chop sugar snap peas and green onions.
- In a large mixing bowl, combine all prepared vegetables along with chopped cilantro and roasted cashews.
- To make the dressing, mix sesame oil, rice vinegar, honey, lime juice, grated ginger in a jar with a lid; shake until combined.
- Pour the dressing over the salad just before serving and toss gently to coat.
