Ingredients
- 1 tablespoon butter or olive oil
- 1 medium onion, chopped
- 2 medium carrots, chopped
- 1 cup chopped celery
- 4 garlic cloves, minced
- 2 medium potatoes, cubed
- 1 (14.5 oz.) can diced tomatoes
- 6–7 cups vegetable broth
- 1½ tablespoons brown sugar
- ⅓ cup dry orzo pasta
- 1 cup frozen sweet corn
- Fresh parsley
Instructions
- In a large pot, heat butter or olive oil over medium heat. Add onions, carrots, and celery; cook for about 8–10 minutes until softened.
- Stir in garlic and tomato paste; cook for an additional minute until fragrant.
- Add potatoes, diced tomatoes (with juices), vegetable broth, brown sugar, Italian seasoning, seasoned salt, and celery salt. Bring to a boil.
- Stir in the orzo; reduce heat to a simmer and cook for approximately 25–30 minutes until orzo is al dente.
- In the last 5 minutes of cooking, add the corn. Season with salt and pepper to taste.
- Remove from heat; stir in fresh parsley and optional lemon juice or vinegar before serving.
