  • 1 large onion
  • 3 cloves garlic
  • 2 sticks celery
  • 2 large carrots
  • 4 large mushrooms
  • 400g canned chopped tomatoes
  • 360ml beef stock (use less for Instant Pot)
  • 1 can cannellini beans
  • Balsamic vinegar, herbs, salt, and pepper

Instructions

  1. Heat oil in a deep pot over medium-high heat. Season and brown the beef in batches; set aside.
  2. Sauté onion, garlic, carrots, and celery until softened.
  3. Deglaze with balsamic vinegar and stock.
  4. Return beef to the pot; add mushrooms, tomatoes, herbs, and remaining stock.
  5. Bring to a boil, cover, and simmer for about 1 hour and 45 minutes until tender.
  6. Stir in beans for the last 20 minutes of cooking.
  7. Thicken sauce with cornstarch slurry before serving.
