  • 1 tsp salt
  • 1 cup cold butter (diced)
  • ½ cup ice water
  • ¼ cup butter
  • ½ cup brown sugar
  • ¼ cup heavy cream
  • 4 tbsp cornstarch
  • 1 egg
  • 1 tbsp water
  • 2 cups milk
  • 3 egg yolks
  • ⅓ cup sugar
  • 1 tbsp cornstarch
  • pinch salt
  • 2 tsp vanilla extract
  • 1 tbsp butter

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and slice the apples, then combine them with lemon juice, sugar, and spices in a bowl.
  3. In another bowl, mix flour and salt, blend in cold butter until crumbly, then add ice water to form dough.
  4. Roll out the dough and fit it into your pie dish.
  5. Layer half the apple mixture in the crust, pour half of the toffee sauce over it, then repeat.
  6. Cover with a second layer of rolled-out dough, seal edges, and cut slits on top.
  7. Bake for about 20 minutes until golden brown.
  8. Prepare custard by whisking together milk, egg yolks, sugar, cornstarch, and vanilla; pour over warm pie and bake again briefly until set.
