Ingredients
- 18 mushroom caps (stems removed)
- 3 tablespoons butter
- 1/2 cup finely diced onion
- 1 teaspoon minced garlic
- 8 ounces mild chicken sausage (without casings)
- 4 ounces softened cream cheese
- 1/4 cup grated parmesan cheese
- 1/2 cup shredded Monterey Jack cheese
- 1/4 cup chopped parsley (reserve some for garnish)
- 1/3 cup panko crumbs
- Nonstick spray
Instructions
- Preheat your oven to 375°F (190°C).
- Spray a baking sheet with nonstick spray and arrange the mushroom caps upside down.
- In a skillet over medium heat, melt 2 tablespoons of butter and sauté the onion until translucent. Add garlic and cook for another minute.
- Add the chicken sausage to the skillet and cook until browned.
- In a mixing bowl, combine the sausage mixture with cream cheese, parmesan, Monterey Jack, chopped parsley (reserve some for garnish), and panko crumbs. Mix well.
- Generously fill each mushroom cap with the stuffing and top with remaining panko crumbs.
- Drizzle the stuffed mushrooms with the remaining butter and bake for about 25 minutes or until golden brown.
