  • 1 box JIFFY corn muffin mix
  • 1 egg
  • 1/2 cup sour cream
  • 1/2 cup creamed corn
  • 1 lb ground beef
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 10 oz can red enchilada sauce (divided)
  • cheddar cheese, shredded
  • Monterey jack cheese, shredded

Instructions

  1. Preheat the oven to 400°F and grease an 8×8 Pyrex casserole pan.
  2. In a mixing bowl, combine the egg, sour cream, creamed corn, and corn muffin mix until blended. Pour into the casserole dish and bake for about 20 minutes until golden brown.
  3. In a skillet over medium heat, brown the ground beef with chopped onion until softened. Add garlic in the last minute of cooking; season with salt, cumin, and chili powder.
  4. After baking the cornbread layer, poke holes in it and pour half of the enchilada sauce over it. Spoon the beef mixture on top and finish with shredded cheeses.
  5. Bake again for another 20 minutes until bubbly and lightly browned.
