- 1 green bell pepper
- 1 yellow bell pepper
- 1 large tomato
- 1 lb ground beef (85/15 recommended)
- 3 cups beef stock
- 3 tbsp tomato paste
- 1 tsp dried oregano
- 2 tsp dried basil
- 2 tsp garlic powder
- 1/4–1/2 tsp black pepper (to taste)
- salt (to taste)
- 3/4 cup Jasmine rice
Instructions
- Dice the onion, bell peppers, and tomato; set aside.
- In a Dutch oven over medium heat, warm olive oil.
- Add diced onions and bell peppers; cook until softened. Stir in diced tomato.
- Move veggies to the side; add ground beef to the center and brown it.
- Mix in tomato paste and pour in beef stock; stir well.
- Season with oregano, basil, garlic powder, salt, and black pepper; simmer on low for 20 minutes with lid slightly ajar.
- Incorporate Jasmine rice; cover and cook until rice is tender.
