- 4 Tbsp olive oil (divided)
- 6 oz brown mushrooms (thinly sliced)
- 1/3 cup onion (chopped)
- 1 clove garlic (minced)
- 1/4 cup fresh parsley (chopped)
- 1 1/2 tsp sea salt (divided)
- 1/2 tsp black pepper (divided)
- 1 1/2 lb beef tenderloin (silver skin removed)
Instructions
- Preheat your oven to 400˚F. Heat 2 Tbsp of olive oil in a cast iron skillet over medium heat.
- Sauté chopped onions and mushrooms until soft, seasoning with salt, pepper, garlic, and parsley. Set aside.
- Prepare the beef by removing silver skin and pounding it to about 1/2" thickness.
- Spread the mushroom mixture over the beef, roll tightly, and secure with toothpicks. Season all sides.
- Sear the rolled tenderloin in the skillet for about 6-8 minutes, then transfer to the oven and bake for 18-20 minutes until cooked to desired doneness.
- Let rest for 10 minutes before slicing and serving.
