  • 1 cup Whole milk (warmed, 105°-110°)
  • 2 1/4 tsp Active dry yeast
  • 1/4 tsp Sugar
  • 6 tbsp Unsalted butter (melted)
  • 2 large Eggs (room temperature)
  • 1/2 cup White granulated sugar
  • 4 cups All purpose flour (spooned and leveled)
  • 1 tsp Salt
  • 2 cups Fresh strawberries (washed, hulled and sliced)
  • 1 tsp Fresh lemon juice
  • 1/3 cup White granulated sugar
  • 1 tbsp Water
  • 2 tbsp Cornstarch
  • 4 oz Cream cheese (softened)
  • 2 tbsp Butter (softened)
  • 1 cup Powdered sugar
  • Zest of 1 lemon
  • 2 tbsp Whole milk

Instructions

  1. In a bowl, stir together warm milk, yeast, and 1/4 tsp sugar. Let it stand until bubbly, about 10 minutes.
  2. In the bowl of a stand mixer, add eggs, melted butter, and yeast mixture.
  3. Next, add flour, sugar, and salt to wet ingredients.
  4. Using a dough hook attachment, mix on low speed until dough begins to form.
  5. Increase speed to medium and knead for 5 minutes.
  6. Spray a large bowl with nonstick spray; place dough inside. Cover and let rise in a warm place until doubled in size, about 1 hour.
  7. In a saucepan, combine sliced strawberries, sugar, and lemon juice. Cook until the mixture begins to simmer. Use a potato masher to help mash the berries as they cook.
  8. Stir together water and cornstarch to create a slurry; pour into the strawberries. Cook for an additional 2-3 minutes until very thick; refrigerate until completely cool.
  9. Place dough onto a lightly floured surface; roll into a 14×18 rectangle about ¼" thick.
  10. Spread an even layer of cooled strawberry filling all over the dough using an offset spatula.
  11. Cut dough into 12 strips using a pizza cutter; roll each strip away from you carefully.
  12. Place rolls into a lightly greased 9×13 pan; loosely cover them and let rise in a warm spot until doubled in size.
  13. Preheat oven to 350°F (175°C).
  14. Bake rolls for 25-30 minutes until golden brown.
  15. In a bowl, combine softened cream cheese, butter, powdered sugar, and lemon zest. Using a handheld mixer, beat until smooth; stir in milk until combined. Spoon frosting onto warm rolls and spread with an offset spatula.
