  • 1/2 cup sugar (or xylitol)
  • 1/2 tsp ground cinnamon
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup oil (or melted butter)
  • 2 1/2 cups diced strawberries
  • 1 1/2 tsp cornstarch (or arrowroot)
  • 1 tbsp pure maple syrup

Instructions

  1. Preheat your oven to 350°F. Grease an 8-inch baking pan or line with parchment paper.
  2. In a large bowl, mix oats, flour, cinnamon, salt, baking powder, and sugar. Stir in oil until combined.
  3. Press two-thirds of the mixture into the bottom of the prepared pan.
  4. In another bowl, combine strawberries, cornstarch, and maple syrup. Spread this mixture over the oat base.
  5. Sprinkle remaining oat mixture on top and press down firmly.
  6. Bake for about 45 minutes until golden brown. Allow to cool completely before refrigerating until firm.
