  • 1 cup homogenized milk
  • 6 tablespoons butter
  • 1 cup dark brown sugar
  • 2 eggs
  • 2 cups unbleached all-purpose flour

  • 1 cup brown sugar
  • ½ cup cream
  • 1 teaspoon kosher salt

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly butter an 11 x 8-inch casserole dish.
  2. In a small bowl, combine the chopped dates and baking soda; scald the milk in a saucepan and pour over the dates. Let cool for 15 minutes.
  3. In separate bowls, mix flour, baking powder, and salt while beating the eggs in another bowl. In a food processor, blend eggs with brown sugar, butter, and vanilla until smooth. Gradually add dry ingredients and cooled date mixture until smooth.
  4. Pour batter into the dish and bake for about 30 minutes or until set.
  5. For the caramel sauce, melt butter in a saucepan; stir in brown sugar and salt until dissolved. Add cream and cook until thickened.
  6. Once the pudding is baked, poke holes in it and pour some caramel sauce on top. Let it soak for 15 minutes before serving.
