Instructions
- Boil water in a large pot. Cook rice vermicelli noodles according to package instructions. Drain and rinse under cold water.
- While noodles cool, thinly slice carrots, bell peppers, cucumber, and green onions.
- In a large bowl, combine shredded carrots, bell peppers, cucumber, bean sprouts, cilantro, mint, and green onions.
- Add the cooled noodles to the vegetable mixture and gently toss to combine.
