  • 1 lb (500g) ground beef (or chicken/turkey)
  • 3 garlic cloves, crushed
  • 1-inch piece of ginger, grated
  • 2 tablespoons light soy sauce
  • 1 tablespoon sesame oil
  • 2 teaspoons fish sauce
  • 12 mini tortillas
  • Olive oil
  • 1 cucumber, diced
  • 1 tablespoon rice vinegar
  • Dumpling dipping sauce

Instructions

  1. In a mixing bowl, combine finely sliced scallions and cilantro (reserve some for topping), ground beef, crushed garlic, grated ginger, light soy sauce, sesame oil, fish sauce, black vinegar, and black pepper. Mix well.
  2. In another bowl, mix diced cucumber with rice vinegar and salt; set aside.
  3. Spoon the beef mixture onto each tortilla, pressing it down to fill one side.
  4. Heat olive oil in a frying pan over medium-high heat; place filled tortillas in the pan. Cook for about four minutes until browned, then flip and cook for an additional minute until crispy.
  5. Top each taco with pickled cucumber and reserved herbs. Drizzle with dumpling dipping sauce or chili oil if desired.
