- 85 g sourdough starter (active)
- 70 g cane sugar
- 1 large egg (room temperature)
- 8 g sea salt
- 430 g bread flour
- 113 g unsalted butter (room temperature)
- 1 cup brown sugar (packed)
- 1/2 tsp ground cinnamon
- 1 tbsp whole milk
- 1/2 cup powdered sugar
Instructions
- Combine filtered water and active sourdough starter in a mixing bowl; stir in cane sugar until dissolved. Whisk in the egg.
- Gradually add sea salt and bread flour while mixing until a dough forms.
- Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
- Place the dough in an oiled bowl, cover with plastic wrap, and let it rise at room temperature for 4–6 hours until doubled in size.
- Punch down the risen dough, divide into small pieces, roll into balls, then dip in melted butter and coat with a cinnamon-sugar mixture.
- Arrange coated dough balls in a baking pan; cover and allow to rise for another hour.
- Preheat the oven to 180°C (350°F) and bake for 30–35 minutes until golden brown. Cool slightly before drizzling with frosting made from powdered sugar and milk.
