  • 3 and 3/4 – 4 cups all-purpose flour (469-500g)
  • Coarse salt for topping
  • 1/2 cup baking soda (120g)
  • 9 cups water (2,160ml)

Instructions

  1. In a large bowl or stand mixer, combine warm water, yeast, and sugar. Let sit for about 5 minutes until foamy.
  2. Add salt, melted butter, and 3 cups of flour to the yeast mixture. Mix until combined.
  3. Gradually incorporate remaining flour until the dough pulls away from the sides.
  4. Knead dough for about 5 minutes until smooth and elastic; let rest for 10-30 minutes.
  5. Preheat oven to 400°F (204°C) and line baking sheets with parchment paper.
  6. Divide dough into six pieces; roll into ropes and cut into bite-sized pieces.
  7. Boil water mixed with baking soda; dip pretzel bites for about 10-15 seconds.
  8. Place on prepared sheets, sprinkle with coarse salt, and bake for about 15 minutes until golden.
