  • 1 cup shredded mozzarella cheese
  • 1/4 cup freshly grated parmesan cheese
  • 1/3 cup chopped Italian herbs (sage, oregano, basil, thyme)
  • 2 cloves grated garlic

Instructions

  1. In a stand mixer bowl fitted with a dough hook, combine warm milk, yeast, and honey. Let it sit for 5–10 minutes until bubbly.
  2. Add eggs, flour (starting with 3 1/2 cups), and salt; mix until incorporated (about 4–5 minutes). Add more flour if necessary for a smooth dough.
  3. Cover the bowl with plastic wrap and let it rise at room temperature for about an hour until doubled in size.
  4. In another bowl, mix together shredded cheeses, herbs, and grated garlic.
  5. Punch down the risen dough and roll it out into a rectangle (12 x 18 inches). Sprinkle the cheese mixture evenly over the dough.
  6. Roll the dough tightly from one long edge to form a log; pinch to seal. Cut in half lengthwise but leave one end intact and twist both halves together.
  7. Shape into a circle on a parchment-lined baking sheet. Cover lightly and let rest for another 15 minutes.
