  • 1/2 pound ground chicken
  • 1/2 packet taco seasoning (about 2 and 1/2 tablespoons)
  • 3 teaspoons fresh lime juice
  • 4 mini taco tortillas
  • Olive oil
  • Optional toppings: queso fresco, chopped lettuce, chipotle mayo

Instructions

  1. In a large mixing bowl, combine ground chicken, taco seasoning, garlic powder, cumin, chili powder, and lime juice. Mix until well combined. Divide the mixture into four equal balls.
  2. Heat olive oil in a frying pan over medium heat. Add two chicken balls at a time and flatten each one with a spatula. Cook for about 3 minutes until browned.
  3. Carefully flip the smash tacos and place a mini tortilla on top of each flattened ball. Press down lightly with the spatula and cook for another 2 minutes.
  4. Flip the tacos again so the tortilla is flat on the pan and ensure the chicken reaches an internal temperature of 165°F. Top with cheese and cook for an additional 90 seconds before transferring to a plate.
