  • 1/4 tsp sea salt
  • 1/3 cup dairy-free milk (warmed)
  • 2 tbsp unsweetened applesauce or dairy-free yogurt
  • 2 tbsp vegan butter
  • 1 tsp vanilla extract
  • 1/2 cup melted unsalted vegan butter (for frangipane)
  • 3/4 cup granulated sugar (for frangipane)
  • 1 1/2 cups almond flour (for frangipane)
  • 1/2 tsp sea salt (for frangipane)
  • 1/4 cup + 2 tbsp all-purpose flour (for frangipane)
  • 3 tbsp almond milk (for frangipane)
  • 2 tsp vanilla extract or 2 tsp almond extract (for frangipane)
  • 2 tbsp vegan cream cheese (for frosting)
  • 1 tbsp vegan butter (for frosting)
  • 1 cup powdered sugar (for frosting)
  • 1 tsp vanilla extract or vanilla bean paste (for frosting)
  • 1/2 cup slivered almonds (for topping)

Instructions

  1. Prepare all ingredients and grease a small casserole dish.
  2. In a mixing bowl, combine flour, yeast, sugar, and salt. Add warmed dairy-free milk, applesauce or yogurt, vegan butter, and vanilla extract.
  3. Mix until a smooth dough forms; knead for about 10 minutes.
  4. Allow the dough to rise covered in a warm place until doubled (20–30 minutes).
  5. Prepare the frangipane filling by whisking together all ingredients until thick.
  6. Roll out the dough into a rectangle and spread two-thirds of the frangipane on top. Roll tightly and cut into four sweet rolls.
  7. Place in the prepared dish; let rise again while preheating your oven to 350°F.
  8. Spread remaining frangipane on top and sprinkle with slivered almonds before baking for 33–35 minutes.
  9. Cool slightly before frosting with a mixture of vegan cream cheese and powdered sugar.
