Ingredients
- 4 chicken breasts (sliced in half horizontally)
- ⅓ cup honey (or maple syrup)
- 3 Tbsp yellow mustard
- 3 Tbsp dijon mustard
- 1½ lbs baby potatoes (halved)
- 1 lb green beans (ends trimmed)
- 2 Tbsp olive oil
- 2 minced garlic cloves
- 1 tsp onion powder
- 1 tsp paprika
- 3 minced garlic cloves
- 1 tsp Italian seasoning
- ½ tsp salt
- ¼ tsp ground black pepper
Instructions
- Preheat your oven to 425°F and prepare a baking sheet.
- In a bowl, coat halved baby potatoes with minced garlic, olive oil, Italian seasoning, salt, and pepper. Spread on one-third of the baking sheet and bake for 15 minutes.
- Meanwhile, mix honey, yellow mustard, dijon mustard, minced garlic, onion powder, and paprika in another bowl.
- Toss sliced chicken in the honey mustard sauce until well coated.
- After 15 minutes of baking potatoes, add the chicken to the pan and bake for an additional 5 minutes.
- Prepare green beans by tossing them in olive oil, salt, and pepper; add them to the pan after the chicken's first bake.
- Bake everything together for another 20–25 minutes until cooked through.
