Ingredients

  • 1 cup plus 2 tablespoons all-purpose flour
  • 1 tablespoon thinly sliced chives
  • 2 teaspoons minced thyme
  • 1 teaspoon minced rosemary
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup cold unsalted butter, cut into small cubes
  • 4 ounces grated Parmesan cheese
  • 1 tablespoon cold water
  • 6 ounces very thinly sliced turkey slices
  • 1 pound brie, cubed into 1 1/2 inch squares
  • Honey for drizzling and serving

Instructions

  1. Preheat your oven to 350°F.
  2. In a mixing bowl, combine flour, chives, thyme, rosemary, salt, and black pepper. Whisk together until well blended.
  3. In a food processor, add cold butter and grated Parmesan. Pulse 3 to 4 times until combined. Scrape down the sides and add the flour mixture. Pulse until it forms messy balls of dough.
  4. Add cold water and pulse an additional 4 to 5 times until combined. Turn mixture onto a floured surface; gently knead until it holds together.
  5. Form dough into a flat disc; wrap in plastic wrap and refrigerate for about 1 hour.
  6. After chilling, roll out dough to about 1/4 inch thickness on a floured surface.
  7. Using a cookie cutter, cut out cookies and transfer them to a parchment-lined baking sheet about an inch apart.
  8. Bake in preheated oven for approximately 18 to 22 minutes or until golden brown.
  9. Remove from oven and transfer cookies to a cooling rack to let cool completely.
  10. Preheat broiler to high. Line half of the cookies on a cooking sheet. Top each with turkey slices followed by a square of brie. Place under broiler for about 30 seconds to 1 minute until brie softens.
  11. Remove from broiler, drizzle with honey, and top each with remaining cookies. Serve immediately for warm, gooey bliss.
