- 1 1/2 cups graham cracker crumbs
- 8 ounces cream cheese (softened)
- 1 cup confectioners’ sugar
- 3.4 ounce box instant vanilla pudding
- 1 1/4 cups cold milk
- 1 cup pumpkin puree
- 2 teaspoons pumpkin pie spice
- 8 ounce tub whipped topping (thawed)
- 1/2 cup toffee bits
- 1/2 cup mini semi-sweet chocolate chips
Instructions
- Preheat oven to 350°F. Line a 9×9-inch baking pan with aluminum foil and spray with cooking spray.
- In a bowl, combine melted butter with graham cracker crumbs until evenly coated. Press into the prepared pan to form the crust.
- Bake crust for about 10 minutes until set; cool for 10 minutes.
- Mix softened cream cheese and confectioners' sugar until smooth; spread over the cooled crust.
- In another bowl, mix vanilla pudding mix and cold milk on medium-high until thickened (about 3 minutes). Stir in pumpkin puree and pumpkin pie spice; fold in half of the whipped topping.
- Spread the pumpkin mixture over the cream cheese layer, then top with remaining whipped topping.
- Sprinkle with toffee bits and chocolate chips. Cover and refrigerate for at least four hours or overnight before serving.
