Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9 x 5 inch loaf pan.
  2. In a large bowl, mix pumpkin puree, egg, light brown sugar, oil, sour cream, and vanilla extract until combined.
  3. Gently fold in pumpkin pie spice, flour, baking powder, baking soda, and salt.
  4. Pour two-thirds of the batter into the prepared loaf pan.
  5. In another bowl, whisk together the ingredients for the cream cheese filling until smooth.
  6. Spread the cream cheese mixture over the first layer of batter evenly.
  7. Pour remaining batter on top and spread out evenly.
