  • 2 tbsp pumpkin puree (28 grams, 1 oz)

  • 1/4 tsp cinnamon
  • 1/8 tsp ground ginger
  • 1/8 tsp ground allspice
  • 1/2 tsp vanilla extract

Instructions

  1. Prepare the macaron batter by whipping egg whites until soft peaks form; gradually add sugar to achieve stiff peaks.
  2. Sift almond flour and powdered sugar together, then gently fold into the whipped egg whites along with food coloring.
  3. Pipe small circles onto prepared parchment-lined baking sheets and let them rest until they form a skin.
