  • 1/2 cup vanilla protein powder
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1/4 cup applesauce
  • 1/4 cup neutral oil
  • 1 teaspoon vanilla extract
  • 1/2 cup strawberry jam
  • 1 cup confectioners sugar (sugar-free or regular)
  • 2 tablespoons milk or water (as needed)

Instructions

  1. Preheat the oven to 170°C (325°F) and line a baking tray with parchment paper.
  2. In a medium bowl, whisk together whole wheat flour, vanilla protein powder, sugar, and baking powder.
  3. In another bowl, mix applesauce, oil, and vanilla until smooth. Combine the wet mixture with the dry ingredients until a dough forms.
  4. Shape the dough into a ball, wrap in plastic wrap, and refrigerate for 15 minutes.
  5. Roll out the dough between two sheets of parchment paper to about 1/8 inch thick. Cut into rectangles.
  6. Place one rectangle on the baking tray, add strawberry jam in the center, then top with another rectangle and seal edges using fingers or a fork.
  7. Bake for 10-15 minutes until light golden brown. Cool on wire rack.
  8. For glaze: whisk together confectioners sugar and milk or water until smooth; drizzle over cooled pop tarts.
