  • 1 large egg
  • ½ tsp pure vanilla extract
  • 1 tbsp corn syrup or maple syrup
  • ⅔ cup coarsely chopped pecans
  • ½ cup unsalted butter (softened)
  • ⅓ cup granulated sugar
  • 1 large egg yolk
  • 1 ⅓ cups all-purpose flour
  • ¼ tsp baking soda
  • ¼ tsp baking powder
  • 4 oz melted dark chocolate

Instructions

  1. In a saucepan, combine brown sugar, cream, egg, vanilla extract, corn syrup or maple syrup, and salt. Whisk until well combined.
  2. Stir in chopped pecans and cook over medium heat until bubbling and thickened (about 5–7 minutes). Remove from heat and let cool.
  3. In a mixing bowl, cream together softened butter and sugars until fluffy. Add egg yolk, vanilla extract, and milk; mix until smooth.
  4. In another bowl, whisk together flour, baking soda, baking powder, and salt. Gradually mix into the wet ingredients until combined.
  5. Chill the dough for one hour or freeze for thirty minutes.
  6. Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  7. Shape dough into balls and press indents in the center for filling.
  8. Spoon cooled pecan mixture into indents and chill for an additional fifteen minutes.
  9. Bake for 8–10 minutes until edges are golden and filling bubbles slightly.
  10. Once cooled, top each cookie with extra filling and drizzle with melted dark chocolate.
