Ingredients
- ½ cup light or dark brown sugar
- 2 tbsp heavy cream
- 1 large egg
- ½ tsp pure vanilla extract
- 1 tbsp corn syrup or maple syrup
- ⅔ cup coarsely chopped pecans
- ½ cup unsalted butter (softened)
- ⅓ cup granulated sugar
- 1 large egg yolk
- 1 ⅓ cups all-purpose flour
- ¼ tsp baking soda
- ¼ tsp baking powder
- 4 oz melted dark chocolate
Instructions
- In a saucepan, combine brown sugar, cream, egg, vanilla extract, corn syrup or maple syrup, and salt. Whisk until well combined.
- Stir in chopped pecans and cook over medium heat until bubbling and thickened (about 5–7 minutes). Remove from heat and let cool.
- In a mixing bowl, cream together softened butter and sugars until fluffy. Add egg yolk, vanilla extract, and milk; mix until smooth.
- In another bowl, whisk together flour, baking soda, baking powder, and salt. Gradually mix into the wet ingredients until combined.
- Chill the dough for one hour or freeze for thirty minutes.
- Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
- Shape dough into balls and press indents in the center for filling.
- Spoon cooled pecan mixture into indents and chill for an additional fifteen minutes.
- Bake for 8–10 minutes until edges are golden and filling bubbles slightly.
- Once cooled, top each cookie with extra filling and drizzle with melted dark chocolate.
